My dream, for the longest time, has been to find a way to honor my grandmothers and the way they took care of their families.
My maternal grandmother was famous for her cooking and she taught all her kids how to make delicious, mouth-watering meals that took long hours to prepare. Her happy place was when her table was full of dishes and surrounded by family and friends.
My paternal grandmother was happiest on Sundays when she would have most of her enormous family taking over the rec room at her retirement home, where she could feed everyone.
I want to take all that love they put into their dishes and pour it into a food truck. My recipes are their recipes handed down. I want to cook great-tasting, mostly healthy food for my guests. The menu won't be long, but it will be diverse, with fresh options, vegan options and meat chicken and seafood options, and a new special every day. All homemade from scratch and locally sourced.
To do this, I need to outfit an 18-foot trailer, test for and obtain licenses and certifications from the state and city, purchase all the supplies and hire competent employees. Please help me see this through.
